Louvi me kolokithia(Black eye beans/peas with palkapa zucchini)

In Cyprus black-eyed beans/peas are eaten with vegetables, olive oil, salt, and lemon and the meal is accompanied with sardines, olives and fresh onion.
Yield: Makes 2 plates for 2 adults
You will need:
1/2 kg. Fresh Black eye beans/peas
2 small palkapa zucchini/courgettes
3-4 tablespoons organic extra virgin olive oil
Fresh lemon juice-to taste
sea salt and ground black pepper-(optional) to taste
1. Clean and rinse the black eye peas(cut the edges, and remove the seeds from palkapa zucchini/courgettes) and cut in pieces.
2. Put in a casserole with hot water, or in a steamer.
3. Cook until soft(should be ready when a sharp knive or a bamboo skewer inserted into the cooked palkapa zucchini /courgettes is coming out easily). Drain them in a colander and serve with olive oil and lemon.
