While visiting Agros, we came across a charcuterie workshop that left a lasting impression on us.

As soon as we stepped through the door, Mr. Haris, the owner of Allantika Daskalou, greeted us warmly and led us on an enthusiastic tour, showcasing his deep passion and respect for traditional recipes.

We instantly felt like we had stepped into more than just a workshop. This was a place where every piece of cured meat told a story. Mr. Haris walked us through the production process in great detail, from the careful selection of meats to the precise ageing in traditional wood-fired smokers. Each step felt like a ritual, honouring both tradition and the finest local ingredients.

Then came the moment of tasting, which was truly a highlight! We started with sausages made from carefully selected meats and aromatic herbs, which impressed us with their bold, rich flavour. The ham, with its velvety texture and deep aroma, was a treat on its own. But the real standout was the louza and lounzaki, which instantly won us over. To top it off, the pastourmas and zalatina rounded out the experience perfectly. Each product was crafted using local red wine, natural herbs, and spices, free of preservatives—a fact that shone through in every bite.

Mr. Haris shared with us that the sausage, ham, and louza from Pitsilia are officially recognised as Protected Geographical Indication (PGI) products, ensuring they embody the authentic taste and exceptional quality of the region.

What impressed us most was Mr. Haris's unwavering commitment to preserving tradition and promoting local culture, all while providing a well-organised and enjoyable experience. The workshop is modern, with separate rooms for each stage of production, and glass partitions that allow visitors to observe the entire process clearly and safely.
