Cherries - one of the most popular summer fruits.
They contain calcium, phosphorus, and vitamin C along with vitamins A and B. Cherries also contain ellagic acid, a phytochemical which may fight cancer.
Cherries are a diuretic, laxative and natural antiseptic and they stimulate the immune system and prevent infection.
Cherry preserve is an easy and delicious treat for anytime of the day. For breakfast on a bowl of yoghurt or as an afternoon snack topped with fresh Anari cheese. Once prepared, it is best kept in a refrigerator.

Yield: 500gr. Cherry preserve
You will need:
500 gr. freshly picked cherries
350 gr. Granulated sugar
100 ml water
¼ teaspoon of vanillin sugar
2 teaspoon fresh lemon juice
Preparation:
1.Cut the stems and wash the cherries.
2.Use the special tool for removing the pit from cherries. Put the cherries, water and sugar in a pan, mix and bring to a boil. Simmer for 20 minutes and then add the lemon juice and vanillin sugar.simmer for another 5 minutes and set aside.
3.Leave the mixture to cool and fill your favourite sterilized/clean glass container.

You may use pure vanilla bean or vanilla extract instead of vanillin sugar. It is important to use a flat casserole or a pan to allow evaporation of the liquids faster -otherwise it will take longer to thicken. |
