Cherries - one of the most popular summer fruits.

They contain calcium, phosphorus, and vitamin C along with vitamins A and B. Cherries also contain ellagic acid, a phytochemical which may fight cancer.

Cherries are a diuretic, laxative and natural antiseptic and they stimulate the immune system and prevent infection.

Cherry preserve is an easy and delicious treat for anytime of the day. For breakfast on a bowl of yoghurt or as an afternoon snack topped with fresh Anari cheese. Once prepared, it is best kept in a refrigerator.

Yield: 500gr. Cherry preserve

You will need:

500 gr. freshly picked cherries

350 gr. Granulated sugar

100 ml water

¼ teaspoon of vanillin sugar

2 teaspoon fresh lemon juice

Preparation:

1.Cut the stems and wash the cherries.

2.Use the special tool for removing the pit from cherries. Put the cherries, water and sugar in a pan, mix and bring to a boil. Simmer for 20 minutes and then add the lemon juice and vanillin sugar.simmer for another 5 minutes and set aside.

3.Leave the mixture to cool and fill your favourite sterilized/clean glass container.

Tip of the Chef

You may use pure vanilla bean or vanilla extract instead of vanillin sugar.

It is important to use a flat casserole or a pan to allow evaporation of the liquids  faster -otherwise it will take longer to thicken.

Part of the granulated sugar may be replaced with brown sugar or you may use an amount of stevia natural sweetener for less calories.
