Mpurekia with halloumi or anari

2 tasteful cypriot recipes for mpourekia!

There is a wide variety of mpurekia puddings, depending on the filling used. They may contain halloumi cheese (goats cheese), anari cheese (cypriot cheese), cream, minced meat or mushrooms.

Here I have the mpurekia recipe with halloumi cheese filling.

They can be cooked in an oil-free pan. In the past, the villages of Cyprus used to use traditional utensil for cooking, such as, the saitza, a slightly hollow vessel, placed in the fire.

Let's prepare the materials:

For the dough we will need

  • 1 kg of flour
  • 1 glass of oil
  • some luke-warm water for kneading
  • a little bit of salt

For stuffing

  • 2 halloumi cheese,
  • 2 eggs
  • dry mint.

Alternatively, you can make them sweet by using anari filling instead.

You will need :

  • 1 1/4 unsalted anari cheese,
  • rose water, 
  • cinnamon,
  • 5-6 tablespoons of sugar,
  • frying oil
  • powdered sugar

Stir until cinnamon, sugar and rose water melt together.

Implementation

Sharpen the flour with the oil and add the water and knead to make the dough soft, leave it for 1/2 hour covered to rest.

Open a thin sheet and cut it round.

Put a spoonful of filling on each piece, fold it and cut it with the help of a glass.


Fry them in a frying pan without oil or hot oil, if you make them with anari cheese, until they get a blonde color. Put them in a drip to drain and sprinkle with a light layer of powdered sugar.
