Tahini can be used as a dipping sauce, a salad dressing, as a spread on bread or sandwiches, on pastry and cakes, smoothies or even soups!
Yield: Makes a cup of dipping sauce
You will need:
120 g. pure tahini paste
Juice of 1 medium size fresh lemon
1 clove chopped/mashed garlic
1 tablespoon organic extra virgin olive oil and 1 teaspoon sesame oil
½ cup/125ml hot water (you can add extra water depending on consistency)
¼ teaspoon sea salt and a pinch of ground white pepper-(optional) to taste
Preparation:
1.Put the tahini paste and garlic into a bowl and mix water with a wire whisk for 1 minute.
2.Gradually add the lemon juice, sesame oil and olive oil.
3.Season with salt and pepper.
